The 1121 variety is bought on two numbers: average grain length before cooking (8.40 mm) and elongation after it (up to 22 mm). That second figure is what separates 1121 from every other basmati and what a biryani house is actually paying for — a grain that doubles in length and stays separate rather than breaking. Purity is contracted at 95% minimum with broken grains at 1% maximum, which is a tight specification and priced accordingly. Steam-parboiled and sortex cleaned as standard; raw and sella grades are available where your market prefers them. This is a credibility line rather than a margin line — merchant spreads on basmati are thin — so it is best used to open an account you then broaden.
