Sesamum indicum L. — natural (unhulled) black sesame, sortex-graded
Black sesame is bought on colour consistency before anything else: the contract parameter is black-seed content, held at 99% minimum with other-coloured seed capped at 1%, because a visibly mixed lot is unusable in the confectionery and dessert applications that drive demand for it. It is not hulled — hulling would strip exactly the pigmented coat the buyer is paying for. Oil content runs around 50% on Indian material per IOPEPC. Korea, Japan and Taiwan are the deepest markets, with growing European demand for black tahini in the premium and health-food segment. Aflatoxin limits for direct human consumption and Salmonella absence in 25 g apply as they do across the sesame range.
