The decision that matters on toor dal is polish, and it is a market question rather than a quality one. Unpolished is what health-led European and North American retail increasingly asks for; water-polished is the middle ground; oil-polished gives the glossy finish much of the Gulf and subcontinental trade still expects. The same lot can be finished three ways at three prices, so specify it explicitly — an unstated polish is the most common cause of a rejected first shipment in this line.
